Hard Water in Orange County and What It Does to Appliances
Hard water is dissolved mineral, mostly calcium and magnesium, picked up as water moves through rock. Orange County draws on sources that carry a lot of it, and the result is visible in almost every kitchen in the county. It does not break appliances outright. It shortens them, quietly, in a few specific places, and those places are worth knowing about.
Where Orange County water comes from
North and central Orange County draw heavily on the groundwater basin under the Santa Ana River, blended with imported supply. South Orange County has very little groundwater of its own and is served almost entirely with imported water, most of it from the Colorado River and the State Water Project.
Both of those imported sources carry dissolved mineral, and Colorado River water in particular is hard. The local groundwater is not soft either. So hardness is high across the county, with the exact figure varying by city and by how the blend is running in a given year.

What scale is, and where it forms
Hardness is dissolved calcium and magnesium. In cold water it mostly stays in solution and does little harm. Two things drop it out: heat, and evaporation.
That is why scale appears in a predictable set of places. Anything that heats water, such as a dishwasher element, a washing machine heater or the boiler side of a steam oven, grows a hard grey-white crust on its hottest surface. Anything where water sits and dries, such as a valve seat, a nozzle or an ice mould, grows the same thing more slowly.
Scale is not only cosmetic. On a heating element it acts as insulation, so the element runs hotter to deliver the same water temperature and fails earlier. In a small orifice it simply narrows it until flow stops.
Dishwashers: the element and the film
Two symptoms, one cause. The visible one is the film on glassware, which is mineral left behind as the load dries. The one that costs you a part is the crust on the heating element, which shortens its life and slows the wash from cold.
Rinse aid deals with most of the film by changing how water leaves the surface rather than beading on it. Steam ovens and steam-assist ranges are the other sensitive group. Anything that boils water in a small reservoir concentrates hardness quickly, and manufacturers of these units almost always specify descaling on a fixed schedule, sometimes with the machine refusing to run until it has been done. Some specify distilled or filtered water for the reservoir outright.
If a steam oven manual gives a descaling interval, treat it as compulsory in this county rather than advisory.
